A lot of the air moving through the engine is to cool it, so the exhaust still contains a lot of air as opposed to exhaust gasses. An afterburner is a secong combustion chamber on the very back of the engine that uses this air and dumps in additional fuel; it's like having another engine but without the complication. The nozzle opening and closing is because the exhaust nozzle shape channels the exhaust to produce usable thrust, and with the afterburner on the volume of exhaust is much higher.

A big engine uses an electric motor to turn the shaft and thus the compressor, and spark plugs ignite the fuel. Small model engines often a leaf blower is used to move the air through and the fuel is ignited as it sprays out the exhaust; once the engine starts running the flame is contained in the combustion chamber
